Separate egg yolk and egg white.

In a double boiler add egg yolk and jaggery. Whisk it properly till the mixture is a bit fluffy. We need to whisk it for 3-4 minutes.

Make a coffee reduction by adding 100ml water and coffee powder and reduce it to 40%.

Soak the biscuit in the coffee reduction and use it for layering.

Take a clean bowl add fresh cream and cream cheese. Whisk properly. Add honey. Ensure it nice and fluffy. Keep it aside. Add the beaten egg to the cream mixture. Mix it in cut and fold method.

Now take a glass tray and add granola on the base. Layer it with the mixture and add the coffee soaked biscuits. Top it up with the cream mixture.

Set the tiramisu in a the chiller for 1hr. Take it out and dust with cocoa powder.
