What is a road trip without your usual tawa chicken from one of those roadside dhabas!? The perfect choice for lunch or dinner when you're out on Indian highways, tawa chicken is a favourite for many, and there's a good reason for it. This culinary delight goes well with anything you have, be it steaming rice, soft rotis, crisp dosa, hot naans, or coin parathas! A quintessential North Indian dish ... , tawa chicken is often cooked in Pakistan as well. However, it is most often associated with Punjab. It is called tawa chicken because it is made in a tawa. Found easily in most households, a tawa is a shallow, concave pan that is usually made from iron, carbon steel, or aluminium. If you're on the lookout for chicken recipes that leave you wanting more, then tawa chicken is the answer. Most often, fresh chicken meat is cut into medium-sized pieces, and a generous amount of masala is added. This is responsible for the burst of flavours when you start eating. While this recipe is big on spice and several flavours, the most dominating ingredients in tawa chicken are onions and tomatoes. Onions are fried till they are a nice golden brown, and a thick puree of tomato is added. It is to this mixture that the meat is added. Almost always cooked in a low flame, the chicken is made to absorb all the ingredients. The onions give a nice roasted texture, while the tomatoes from a thick coat that results in a delicious curry. If you want something that is a little drier, you can make tawa chicken fry, by cooking the dish a little longer. From start to finish, you only need to use the tawa to make the dish and no other vessel is required. Again, this is why it is so famously known as tawa chicken. With the right recipe at hand and a good tawa at home, anyone can go ahead and make this delicious dish, which is the perfect idea for a main course meal!
