Directions

In a bowl, add Water, Yellow Moong and keep for soaking.

In a heavy bottom vessel, add Water, Salt, soaked Moong and boil for 20 mins.

In a heavy bottom vessel, add Water, Salt, diced Carrots and boil till soft.

In a heavy bottom vessel, add Water, Salt, Potatoes and boil till soft. Once cool, remove the skin and cut into dices.

Heat Oil in pan. Add Salt, diced Red Pepper and saute.

Remove it to a bowl and set aside.

In a mixing bowl, add Sauteed Red Pepper, boiled diced Carrots, Potatoes and toss it well and set aside.

Heat Oil in pan. Add Garlic, Jeera and saute.

Add Cashewnut and saute.

Add Water and bring to boil.

Add Spinach, Salt, Pepper and boil.

Add Boiled Moong Dal and bring to boil till soft.

Remove it to a blender and make a fine paste.

Strain the liquid into a bowl and again blend the remaining strained and strain again to the bowl.

In a serving bowl, place the Veg Mix on the base.

• Use fresh baby spinach leaves without roots for best results in this recipe. • Be very careful while blanching the spinach, if overcooked then it will result in a loss of nutrients and colour. The spinach should be lightly sautéed over a medium flame and immediately removed once it turns into dark green colour. Once removed from the flame, place it under running cold water to keep the bright green colour intact. • While blending the ingredients, make sure that it’s not very hot. As steam expands quickly in a blending jar it may cause the ingredients to splutter outside and cause severe burns. Fill the jar only up to one-third of its portion to prevent this from happening. • If opting for a non-vegan version, use butter instead of refined oil and also add milk or cream for a richer and fuller taste. Palak Soup Recipe
The stepwise procedure to prepare a cream of spinach soup is stated below. Soak moong dal in water and then boil it for 20 minutes with salt and water. Remove it to a blender and make a fine paste and leave it aside for future use. In a heavy-bottomed vessel, boil the potato with water and salt, peel the soft-boiled potato's skin and keep it in a bowl. Rinse the palak leaves in running water. Finely chop it and leave it aside. In a pan or Kadai, heat butter and add a bay leaf to it. Saute for 2 to 3 seconds. Drop in 2 to 3 chopped garlic and saute it until they turn brown. But take care not to burn the garlic. Make sure to do it on low flame. Add ¼ cup of chopped onions and saute until they turn translucent. Then drop diced carrots, red pepper and the boiled potatoes. Then add approximately 2 cups of chopped spinach. Mix salt and pepper and stir and season it well. Add 1 tablespoon of gram flour or besan to it. Mix them well.
