Cut Onion through the root. Place it on a tray, sprinkle Balsamic Vinegar, Oil, Rosemary and Salt and Pepper. Bake at 160 degree for 20 mins

For Sweet Potato Paste, boil Sweet Potato in Water till soft.

Place the peeled potato in a blender to make a smooth paste.

For roasted Beetroot and Carrot, Take Beetroot and Carrot apply Oil and Salt and Pepper. Wrap it nicely with aluminium foil and roast at 180 degree for 1 hour.

Soak Black Grain Rice for 30 mins. Strain and boil in salted water till cooked.

For the dressing- in a blender Sweet Potato Paste, Salad Oil, Lime Juice, Orange Juice, Honey, Salt, Mint and Pepper. Blend it to a smooth paste.

In a deep bowl arrange Iceberg Lettuce, Green Lettuce, Beetroots, roasted Carrots and boiled Haricot Beans.

Garnish with roasted Onion, Mint Leaves, Spring Onion, Cashew nuts, Parsley, Ricotta Cheese.

Serve chilled with dressing on side.
