Directions

Add roasted chana and oats in a blender jar, make a fine powder and transfer it to a bowl.

Peel half the apple and put it in a blender along with yogurt, half amount of jaggery and 2 tbsp. of almond milk.

Make a fine puree and mix it with grounded oats and chana flour. Gradually add 1.5 cups of almond milk and which to make a batter. Make sure the batter is not too thin or too thick. it should be of coating consistency (check if it coats the back of a spoon). Put the batter to rest for 10 minutes

Cut the leftover half apple into dice and set aside. Take a pan, add jaggery along with water and bring the water to boil.

Once the water starts boiling, add diced apple along with dried cranberries and mix well.

Add green cardamom and fennel seeds and allow to cook on a slow flame till apple dice gets tender.

Take the pancake batter, add 1 tbsp of olive oil and mix well.

Heat a non- stick pan, add a teaspoon of batter and make the small pancake.

Once you see bubble formation on top, flip the pancake and cook it from the other side. Once it is cooked, take out from the pan.

Take mini pancakes in a bowl, add half of the toasted apples mixture and mix.

Take a serving dish, place the coated pancakes and garnish with toasted apple and a mint leaf.
