Fine chop onion,1 tomato, and coriander leaves. Puree 2 tomatoes. Set aside. Heat oil in a pan, and add cumin seeds and allow it to crackle. Add chopped onion, cook till golden brown color.

Add, green chilli, saute it. Add ginger garlic paste and cook till rawness disappears. Add red chilli powder, coriander powder and garam masala and cook well .

Add chopped tomato and tomato puree, sprinkle salt to taste and cook the tomato till it gets mushy.

Add water and let the gravy simmer on low flame. Keep stirring occasionally.

Meanwhile, break egg in a bowl add chopped tomato, onion, green chilli, red chilli powder and salt to taste. Whisk well.

Heat a saucepan, brush a little oil. Pour little egg batter and spread.

Let the omelette cook, when it is 80% cooked, roll it from the edges with a spatula and cut into 1 inch cylinder shapes. Set aside. Repeat the same with remaining batter.

Add the omelette to the gravy and cook it for a min.

Turn off the flame, garnish with coriander leaves and serve hot.
