Peel the carrot and cut it into baton shape. Cut ginger into julienne, slit the green chili from the center and keep it aside.

Take a pan, add water, black pepper, ginger, salt and jaggery. Bring it to a boil on a slow flame, add vinegar.

Remove from the flame and let it rest for 2 minutes .

Take a jar or bottle, place the carrots and green chili. Press gently with a spoon.
