Directions

In a heavy bottom vessel, boil Water with Salt, Vinegar. Add Eggs and boil for 8 mins.

Once Eggs are cool, peel and discard the shell. Cut into half and remove the egg yolk. Keep aside.

Heat Oil in a pan. Add Ginger Garlic Paste and saute.

Add chopped Onion, Salt and saute till golden brown.

Add Turmeric Powder, Red Chilli Powder and cook it for a minute.

Add chopped Tomatoes and cook till mushy and gravy become thick. Keep aside.

In a heavy bottom vessel, add Water, Cashew, Magaz and bring to boil. Strain it and keep aside.

Heat Oil in a pan. Add Cardamom, Bayleaf and saute.

Add sliced Onions and saute.

Add boiled Cashew and Magaz and saute.

Add Water and boil for 1 hr in slow flame.

In a blender, add the above boiled Cashew and Magaz and make a paste.

Heat Oil in pan. Add Curry Leaves, chopped Ginger, Garlic, Green Chilli and saute.

Add Onion Tomato Masala and cook well.

Add Cumin Powder, Garam Masala, Turmeric Powder, Red Chilli Powder, Coriander Powder, Amchur Powder, Chana Masala, Salt and saute.

Add Tomato Puree, Water and bring to boil.

Add Cashew Magaz Paste, Jaggery and cook for some time.

Add the boiled Egg and cook.

Remove it to a bowl and garnish with chopped Coriander.
Tips to make good Masala Egg Curry:
Masala egg curry is easy to make. Some added tips to make a good masala egg curry are: ● Ensure the eggs are hard-boiled for a good curry. ● Make long incisions on the boiled eggs, so that flavours of the curry seep into the eggs. ● For enhanced flavour, marinate the boiled eggs in a bit of oil, red chilli/pepper powder, turmeric and salt. Then shallow fry them in a pan. ● For a thick gravy, add a bit of roasted gram flour to it. ● To avoid the spices getting burnt, mix them with water in a bowl and then add to the pan. ● Add a bit of Kasuri methi to the dish when almost cooked and stir in for a minute. It will enhance the aroma and flavour. ● Use half a teaspoon of Kashmiri red chilli powder to make the dish. It gives a good colour to the dish.
