Assemble Foxtail Millet, Water and Salt.

Boil till Millets are soft.

Assemble diced Sweet Potato, Salt, Pepper, Oil and Rosemary.

Mix everything and roast for 20 mins at 160 degree C or till Sweet Potatoes are Golden Brown.

Jamaican Marinade- Assemble Oil, Pepper, Red Chilli Powder, Jeera Powder, Cinnamon Powder, Star Anise, Garlic, Ginger, Dark Soy Sauce, chopped Carrot, Onion, Celery, Leek and fresh Chilli.

Heat Oil in a pan and sauté vegetables.

Let the sauteed vegetables cool. Place them in a blender with all the other ingredients and blend to a coarse paste.

Jamaican Tofu- Assemble Tofu, Jamaican Marinade and Salt.

Marinate Tofu and grill on a hot pan.

Grill on both sides. Keep aside.

Cut Yellow Zucchini into triangles. Sauté in a hot pan with Oil, Salt, Pepper, Garlic and Thyme.

Sauté till its light Brown. Keep aside.

Dressing- Assemble Balsamic Vinegar, Honey, Dijon Mustard, Salad Oil, Cornflour Slurry, Salt, Pepper & Water.

Mix everything into a smooth consistency.

Assemble Clean Pomegranate, Rocket Leaves, Green Lettuce, Cherry Tomatoes and Cucumber cut into triangles.

Arrange the Rocket and Leaf Lettuce on the base of the bowl.

Top with Cucumber, Cherry Tomatoes, Sweet Potato, boiled Millet, Zucchini and Pomegranate.

Cut the grilled Tofu into dices and arrange.
