Directions

For Whole Wheat Chips- Make dough with Atta, Salt, Water, Oil and Curd.

Divide into small balls.

Using rolling pin, flatten into round shape.

Place on hot tawa.

Cook on both the side. Remove to a Sandwich griller on medium heat. Cook till crisp. Break into small pieces. Keep aside.

For Mirepoix- In a pan, add Oil, chopped Onion, Garlic, Celery, Leeks, Carrot and Thyme. Saute it. Keep aside.

For Lemon Cous Cous- In a bowl, add Sautéed Vegetables, Salt, Pepper, Lime Zest and Cous Cous.

Pour hot Water over the mixture and close the lid. Rest for 5 min. Keep aside.

For Greek Vinaigrette- In a blender, add Oil, Salt, Pepper, Oregano, minced Garlic, Lemon Juice and boiled Sweet Potato and Water. Make a smooth emulsion.

For Soaked Sun-dried Tomatoes- Soak Sun Dried Tomato in water overnight, refrigerated.

In a bowl, arrange mixed green lettuce.

Add lemon Cous Cous, Bell Peppers, Cucumber cut into triangles and Olives.

Garnish with Whole Wheat Chips, Sunflower Seeds, Feta Cheese, soaked Sun Dried Tomatoes, Mint Leaves.
