Cut Sweet Potato into dices and boil it in Salted Water.

Blend it into a smooth paste and keep it.

Marinate the Chicken with Garlic, Star Anise Powder, Salt, Pepper, all Spice Powder & Dijon Mustard and grill it on a hot grill pan. Finish in oven for 6 mins at 160 degrees.

Cut the Cantaloupe into wedges. On a grill pan grill it on both sides.

Blend Sweet Potato Paste, Honey, Salad Oil, Tobasco Sauce, Lime Juice and Orange Juice to a smooth dressing.

Put mixed Lettuce on the base of the bowl.

Top up with Cucumber, Cherry Tomatoes, Grilled Cantaloupe, Grilled Chicken, Melon Seeds, Feta Cheese and Mint.
