Directions

In a bowl, add Water, Rajma and keep for overnight soaking.

In a pressure cooker, add soaked Rajma, Water and Salt. Cook till soft.

In a heavy bottom vessels bring Water to boil. Add Corn and Salt and boil till done.

Remove the boiled Rajma to a bowl and keep aside.

Remove the corn to a plate and allow it to dry. Using a knife to cut off all the Kernels and remove the Cob. Keep the Kernels aside.

In a bowl, mix Chicken and Jamaican Spice. Rest the mix.

In a mixing bowl, add Atta, Makki Atta, Baking Powder, Salt, Cinnamon Powder, Cayenne Pepper and Thyme Leaves. Mix well.

Cut the Pumpkin & boil in Water till soft.

Add the cooked Pumpkin to a blender and blitz to make a puree.

Remove to a bowl.

Add Pumpkin Purée, cold pressed Coconut Oil, Honey and Soya Milk. Whisk well.

Mix the above two mixtures together and whisk well to form batter.

Oil a butter paper and layer the batter into a baking tray.

Pour the batter into the tray and bake for 20-25 mins at 180 degree C or till cooked through.

Remove from the oven and set aside to cool. Overturn the tray allow the base to cool. Remove the butter paper.

Cut the Corn Bread into pieces and place on a plate for later use.

Heat up a heavy pan. Add Peanuts, Sesame Seeds, Sunflower Seeds and Pumpkin Seeds. Mix up and keep the Garnish mix aside for future use.

In a bowl, add diced Tomato, chopped Mint, Parsley, Lemon Juice, Pepper, Garnish Mix.

Toss well and garnish with Feta Cheese.

In a bowl, add blanched Corn, chopped Green Chilli, Salt, Lemon Juice, Green Pepper, chopped Coriander and Spring Onions. Mix well.

Remove to a serving bowl and keep aside.

Mash half of the boiled Rajma and keep aside for later use.

Heat Oil in a pan. Add chopped Garlic, Green Chillies, Celery and sauté.

Add Tomatoes and cook.

Add Black Pepper Powder, Cumin Powder, Chilli Powder, Salt, Aromat Powder, Jamaica Spices and cook for 1 min.

Add diced Carrots, Green Pepper, Green Zucchini and saute for some time.

Add boiled Rajma, Rajma Paste and saute.

Add Water and bring to boil.

Add marinated Chicken and cook till done.

Remove to a bowl and garnish with chopped Coriander Leaves.
