Soak chickpeas overnight or at least for 4-5 hours. Rinse and drain it. Pressure cook the soaked chickpeas with 1 litre of water. (give 5-6 whistles)

Drain the chickpeas and do not throw the water. Let the water cool down completely. Use cooked chickpeas as required or store in a freezer for later use.

Take the chickpea water in a saucepan add 2 tablespoon of cooked chickpeas, let it boil and reduce on a medium flame. It should reduce to half of the quantity. It will take 20-30 min.

Strain the chickpea water and let it cool down completely in the fridge. Meanwhile, microwave the chocolate and set it aside.

As the chickpeas water is cooled down, take 1 and 1/2 cup of water in a bowl. Using a hand blender, whisk the chickpeas water until stiff peaks form (it will take 5-8 min).

Gradually adding jaggery powder while whisking, gently fold in the melted chocolate. Do not over mix.

Transfer the mousse in a serving bowl and chill at least for 3-4 hours, or overnight.
